Rename example-data repo to something more self explanatory? #38
Description
At some point, do we want to consider renaming this repo from example-data to something more self explanatory, like data-transformation-workflows? Since it contains Jupyter notebooks that illustrate the transformation of node data into CRDCH instance data.

data-transformation-workflowsis good, but leaves out both the example data (which I think is important) and validation (which I think is generally an important part of what this repo is for).I think we should emphasize the "example"/"exemplar" aspect of it: what about

Maybe something with the word "implementation" in it? Since we're implementing the CRDC-H model?
